My second chair is almost complete. I had a bit of time last night to work on it. I still need to go over the cane backs one more time. I know the cushions aren't perfect but that's ok. I'm pretty happy with them. I still need to sew up some little pillows for the backs. The perfect rug at the perfect price is not so easy to find. I'm still on the hunt for that.
I made the Blueberry Casserole for the kiddos this morning. I cut down the sugar to 1/2 cup and it was still good. I made my own buttermilk substitute. *I added a cup of half n half to one tablespoon of lemon juice and let it sit for five minutes. I didn't have buttermilk so this worked just fine.
Here's the recipe:
Blueberry Breakfast Casserole
½ cup unsalted butter, room temp
2 tsp. lemon zest(I used a little less)
1/2 cup sugar (original recipe used 7/8 cup)
1 egg, room temp
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk (I made my own, see note above)
1. Preheat the oven to 350ºF. Cream butter with lemon zest and 1/2 cup of the sugar until light and fluffy.
2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.
3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries.
4. Grease a 9-inch square baking pan. (I used an 8 x 12) coated with non-stick spray. Spread batter into pan, it is quite thick. Sprinkle batter with sugar. Bake for 35 minutes. When toothpick comes out clean it's done.

I think I have the cousins to your chairs in our bedroom in Illinois! I bought them at an auction cheap and had them painted and reupholstered in a funky print. Isn't it fun to repurpose?

I love blueberry anything! Yours looks great and I too do the sugar subtraction on most of my dessert recipes. I also use 1 T of vinegar in just plain skim milk for buttermilk and it still works! xoxo ~Lili
