I took a ride to Barnes and Noble to wander around for a bit, hoping for some inspiration to strike or motivation to accomplish something.
I ended up coming home and baking the Chomeur Cakes that I had on my menu for this week. It was just what I needed. I love to bake and I know the kids look forward to dessert. The recipe is quite simple. From House & Home February 2012.
1/4 cup unsalted butter, room temperature
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking powder
1 cup maple syrup
1 cup heavy cream
pinch of salt (I use kosher)
Combine butter and sugars, blend until smooth. Add eggs and vanilla, until combined. Add flour and baking powder, stir until well mixed. Refrigerate for an hour.
In saucepan bring syrup and cream to a boil, stirring often. Once it boils remove from heat, add pinch of salt. Let cool a bit and then refriderate for one hour.
Preheat oven to 450. Place your 6 ramekins on a foil lined baking sheet. Mine were a bit larger than the 5oz ones the recipe calls for so they didn't really bubble over. Put a few tablespoons of the cream mixture in the bottom of each and then evenly divide the dough pressing down a bit. Drizzle the rest of the cream mixture evenly over each. Bake for 20-25 minutes until toothpick comes out clean and they are golden brown. Mine took about 30 minutes and I turned the baking sheet so they browned evenly.
Serve with ice cream!
